What the assistant reads
Products, collections, inventory and the store's own pages, read live through Shopify's Admin API with the permissions granted at install.
Orders and customers stay on the desk
The anonymous chat answers from the catalogue and the store's own pages. It never reads an order or a customer record; those belong to the merchant's desk, where a person answers them.
On the storefront without a theme edit
The app adds the chat as a Shopify ScriptTag and removes it again on disconnect. If a store does not allow ScriptTags, the Install page gives the embed code for the theme instead.
How the connection is protected
The OAuth token is stored encrypted and stays on the server. Disconnecting removes the ScriptTag and the webhook subscriptions Ethere created; the app stays listed in Shopify until it is uninstalled there.

Do I need to edit the theme?
No. The app adds the chat through Shopify's ScriptTag and removes it on disconnect.
Can the assistant read orders or customers?
Not in the anonymous chat. Orders and customer records are answered on the merchant's desk by a person.
What happens when I disconnect?
Ethere removes the ScriptTag it added and the webhook subscriptions it created, and deletes the stored token. The app remains installed in Shopify until it is uninstalled there.
